style=\"font-weight: 400;\">Su baj\u00edsimo nivel de acidez y de per\u00f3xidos junto con un alt\u00edsimo contenido en polifenoles lo clasifican, seg\u00fan la normativa de la UE, como un medio eficaz para combatir el estr\u00e9s oxidativo celular. Y, ver\u00e1, no solo alcanzamos los umbrales establecidos, los superamos con creces.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Perm\u00edtanos darte algunos par\u00e1metros clave:<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><em>Acidez<\/em><span style=\"font-weight: 400;\"> \u2013 en AOVE un nivel de acidez de 0,8% es medio, 0,5% es bueno y 0,3% se considera de m\u00e1xima calidad.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">El AOVES REVOLT tiene un nivel de acidez del 0,19%.<\/span><\/p>\n<p><em>Nivel de per\u00f3xido<\/em><span style=\"font-weight: 400;\"> \u2013 el valor m\u00e1ximo de per\u00f3xido para el aceite de oliva virgen extra es 20. El aceite de oliva virgen extra de alta calidad debe tener un valor de per\u00f3xido inferior a 12.<br \/>\n<\/span><span style=\"font-weight: 400;\">REVOLT AOVES tiene un nivel de per\u00f3xidos de 7.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><strong><br \/>\n<\/strong><em>polifenoles<\/em><span style=\"font-weight: 400;\"> \u2013 los aceites de oliva de la m\u00e1s alta calidad en promedio oscilan entre 100 y 250 mg\/kg.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">REVOLT AOVES contiene cerca de 400mg de polifenoles por kg.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pero echemos un vistazo m\u00e1s de cerca a lo que todo esto significa realmente:<\/span><\/p>\n<p><span style=\"font-weight: 400;\"><em>ACIDEZ<\/em><br \/>\n<\/span><span style=\"font-weight: 400;\">En el fruto el nivel de acidez del aceite de oliva es cero, pero durante el proceso de elaboraci\u00f3n del aceite de oliva su nivel de acidez aumenta debido a los \u00e1cidos grasos libres que se liberan y que hay que evitar. Entonces, la baja acidez b\u00e1sicamente es un indicador de como r\u00e1pido y limpio se ha producido el aceite.<\/span><\/p>\n<p><em>GRASAS MONOINSATURADAS<br \/>\n<\/em><span style=\"font-weight: 400;\">Estos son \u00e1cidos grasos omega-9, y realmente nos beneficiamos de ellos.<br \/>\n<\/span><span style=\"font-weight: 400;\">Los alimentos integrales y los aceites vegetales reci\u00e9n exprimidos, por ejemplo, los proporcionan. Nuestro aceite de oliva contiene un 73% de grasas monoinsaturadas. Estas grasas est\u00e1n asociadas con niveles equilibrados de colesterol en la sangre y un riesgo reducido de enfermedades cr\u00f3nicas degenerativas, y respaldan fuertemente que sean los niveles de az\u00facar en la sangre controlados.<\/span><\/p>\n<p><em>GRASAS POLIINSATURADAS<\/em><br \/>\n<span style=\"font-weight: 400;\">Las grasas poliinsaturadas tienen principalmente los mismos beneficios que las grasas monoinsaturadas, pero como nuestro cuerpo no produce estas grasas, necesitamos consumirlas para poder obtenerlas.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Tambi\u00e9n proporcionan nutrientes para ayudar a desarrollar y mantener las c\u00e9lulas de su cuerpo y aportan vitamina E a su dieta, un fuerte antioxidante del que generalmente escaseamos.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Las grasas poliinsaturadas son \u00e1cidos grasos esenciales omega-3 y omega-6 que ayudan a tener un coraz\u00f3n sano, proporciones adecuadas de colesterol, niveles equilibrados de az\u00facar en la sangre y presi\u00f3n arterial. Estudios recientes sugieren fuertemente que estas grasas tambi\u00e9n act\u00faan como potentes agentes antiinflamatorios cerebrales que combaten la depresi\u00f3n. Esta podr\u00eda ser otra raz\u00f3n por la que la \u201cdieta mediterr\u00e1nea\u201d tiene tan buen rollo.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\"><em>POLIFENOLES<\/em><br \/>\n<\/span><span style=\"font-weight: 400;\">Estos son compuestos bioactivos que vienen con nombres elegantes como hidroxitirosol, tirosol, oleurope\u00edna u oleace\u00edna, sustancias qu\u00edmicas naturales que se encuentran en peque\u00f1as cantidades en las aceitunas, as\u00ed como en las nueces, el cacao o el t\u00e9, por ejemplo. Cuanto mayor sea la calidad de su aceite de oliva, mayor ser\u00e1 el contenido de polifenoles.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Los polifenoles son un grupo de compuestos estudiado a fondo y la investigaci\u00f3n demuestra claramente sus efectos protectores contra el estr\u00e9s oxidativo, un tipo de estr\u00e9s fisiol\u00f3gico que puede causar mutaciones en el ADN y provocar c\u00e1ncer, diabetes, enfermedades card\u00edacas y trastornos neurodegenerativos como el Alzheimer.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Otros beneficios para la salud son niveles m\u00e1s bajos de colesterol,<\/span><span style=\"font-weight: 400;\">\u00a0un menor riesgo de enfermedad card\u00edaca, una presi\u00f3n arterial m\u00e1s baja, alivio de la inflamaci\u00f3n y el dolor, reducci\u00f3n del riesgo de diabetes, ayuda a combatir el c\u00e1ncer, mejora la salud del cerebro y las funciones cognitivas, mejora la salud de su microbioma intestinal, apoya la salud mental e incluso proporcionando ayuda en la p\u00e9rdida de peso.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A diferencia de la acidez, el contenido de polifenoles se nota en el sabor, un sabor fresco e incluso ligeramente amargo, as\u00ed como cierto final picante, son signos de un aceite saludable lleno de antioxidantes y rico en agentes antiinflamatorios.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La cantidad de este material que se conserve en el producto final depende de varios factores como:<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">El momento de la cosecha, cuanto antes mejor, las aceitunas verdes tienen los niveles m\u00e1s altos de polifenoles.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">El tiempo de llevar la cosecha al molino: cuanto antes se prensan las aceitunas cosechadas, menos se estropea y oxida la fruta.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">El tipo de aceituna utilizada: Hojiblanca y Manzanilla, la mezcla que utilizan principalmente nuestros agricultores, son conocidas por estar entre las m\u00e1s ricas en polifenoles.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La forma en que almacena el aceite determina cu\u00e1nto tiempo estar\u00e1n presentes los polifenoles en su aceite. La luz y el ox\u00edgeno descomponen estos \u00e1cidos grasos r\u00e1pidamente, por lo que creamos nuestro empaque bag-in-box donde el aceite est\u00e1 completamente sellado contra la luz y el ox\u00edgeno hasta la \u00faltima gota. Esto, junto con un alto nivel de polifenoles, hace que nuestro aceite de oliva sea extremadamente estable, lo que significa que tarda mucho tiempo, en algunos casos hasta cinco a\u00f1os, hasta que comienza a ponerse rancio.<\/span><\/p>\n<p><em>NIVEL DE PER\u00d3XIDO<\/em><br \/>\n<span style=\"font-weight: 400;\">Determina la oxidaci\u00f3n inicial del aceite, siendo un indicador de qu\u00e9 tan limpio y r\u00e1pido se ha producido este aceite, por lo que un bajo nivel de per\u00f3xidos es muy deseable si se quiere tener un producto que sea estable y mantenga sus propiedades saludables por mucho tiempo. The wealth of the Minoan culture on the greek island of Crete (3000 B.C.) is believed to have come in great parts from the cultivation of the olive tree.<br \/>\nThe wild olives can still be found in the oak, carob and pine forests of Andalusia. Here they are called &#8220;acebuche&#8221;, the latin name being <em>olea europaea var. sylvestris<\/em> o <em>olea oleasta<\/em>.<br \/>\nThe fruits are very small and the output of one tree is minimal, so for one person to harvest the olives for one litre of oil can take several hours. The acebuche oil, however, is famed for its medicinal value, let alone its extraordinary taste.<br \/>\nThis year in October and November we will swarm out into the woods to bring to you the absolute crown of olive oils.
